SCOTCH FLIGHT

MUCH BETTER BLENDS
Blends were what made Scotch whisky a global success, and the better blends are still considered the real masterpieces by acclaimed master blenders. Here are three greats           17
Antiquary 21 yr   Incredibly well-integrated, beautifully balanced, a dream blend
Chivas Regal 18 yr   a beautiful aged blend, this effortlessly baloances malt and cocoa sweetness,  light fruit notes, and a soothing oaky spice
Sheep Dip   Fragrant with notes of the coast, tangy, malty, honey, toffee

BLENDED MALTS
Once called “vatted malts,” these whiskies are made of single malts. Only, with none of the grain whiskies that go into blends. A difference that is well worth exploring.           15.75
Compass Box Peat Monster   Aptly named; as smoky as any Islay.
Johnnie Walker Green   A beautiful blending; recently brought back to America.
Monkey Shoulder   Three Speyside malts: Glenfiddich, Balvenie, and the rare Kininvie

ISLAY STARTER
If you're new to Islay whiskies, firstly, it's pronounced “EYE-luh.” Secondly, there's no gentle start to these smoky drams, so buckle up           18
Ardbeg 10 yr   Raw, peaty power from a bold distillery. No holds barred
Bowmore 12 yr   Sweet and delicious heather honey and gentle peat smoke
Lagavulin 16 yr   Heavy smoke supported by rich, aged malt. Classic.

THE ADVANCED ISLAY
When you've gotten the taste for Islay peat, it's time to dig deeper and see what else the island has to offer.         18
Ardbeg Uigeadail   It's the Big One: 54.2% ABV, uncolored, unfiltered, and thumpingly rich with sherry, vanilla, and the coal smoke of Islay peat
Laphroaig Triplewood   A decent balance of flavors and aromas with a full body, smooth texture and a bit of heat on its way down
Bruichladdich Port Charlotte   The smoke arrives first followed by an immense creaminess on the palate, then notes or sherbet lemon emerge

THE OTHER ISLANDS
Islay isn't the only island with a distillery in Scotland. Talisker makes beautiful whisky on the Isle of Skye, and Highland Park ages in 100% sherry casks on Orkney          17
Highland Park 12 yr   Done mostly with Spanish oak sherry casks; fruit, smoke, wood
Highland Park 15 yr   More American oak sherry casks; more vanilla, lighter
Talisker Storm   Well-named. The peat in this one roars and thunders

WOOD MAKES WHISKY
It's a rule of thumb that at least 50% of a whisky's flavor (and all of its color) comes from the barrel. Scotch whisky almost always ages in either ex-bourbon barrels or ex-sherry barrels. Taste the difference           14.5
Auchenstan American Oak   Fruit and spice with the vanilla of American oak
The Dalmore 12 yr   A famously sherry-heavy malt; vinous, orange, even chocolate
Balvenie Doublewood 12yr   A combination of both cask types; taste the blend

MAXIMUM SHERRY
If you really, really like sherry cask-aged Scotch whisky, the fruit, the vinous character, the waxiness, then we have some sherry experiences for you.           18
Highland Park Dark Origins   All first-fill sherry casks make this zesty with wine fruit.
Glengoyne 15 yr   Complex, sweet, and rounded with a spicy oak finish.
Sweet Wee Scallywag   A blend of Speyside malts with an outsized sherry influence and a winning sweetness indeed. Rich, fruity, and as much fun as a spunky terrier

TAKE ANOTHER LOOK
Some malts get overlooked in a rush to older bottlings, or fancy finishes. Take your time! These three are beautiful little classics that reward a quiet contemplation.           17
Edradour 10yr   A lovely little malt from one of the smallest distilleries in Scotland.
Glenmorangie Original   The deliciously layered base for all those amazing finishes.
Cragganmore 12 yr   Approach gently: you'll find honey, fruit, and a breath of smoke.

THE HIGHLANDERS
A selection of distillers from Scotland's west, all a stone's throw from salt water: the elegant Glenmorangie; the exciting Oban; and the full-bodied Ben Nevis          19.25
Ben Nevis   Exudes some beautiful coffee, chocolate, and toffeed peat notes
Glenmorangie Nectar D’or   Finished in sauternes casks for a decadent richness
Oban 18 yr   rich spicy oak, warm spiced cider, salted caramel and golden delicious apples

THE SPEYSIDERS
Speyside is the heart of Scotland's distilling; there are more whisky distilleries concentrated here than anywhere else on earth. There's the giant Glenlivet, the vintage-driven Glenrothes, and the seldom-seen Longmorn          21.25
Glenlivet 18 yr   Baked fruit, sweet grains, firm oak structure: this is whisky architecture
Glenrothes 1998   Still consistently underrated; full of vanilla, spices, and nuts
Longmorn 16yr   Almost an archetype Speyside; malt-focused, lush, fruity
